Kitchen Notes

Deep-frying is the classic treatment: dry the fish thoroughly, dust lightly with starch and fry until golden, so the outside crisps while the inside stays tender. They are just as good pan-fried with salt and pepper, braised with soy and ginger, or simmered into a light soup.

Storage

Keep frozen at -18C or below. Thaw slowly in the refrigerator, pat dry before frying, and reseal the pack tightly to prevent freezer burn.
